Recently, the first "Chinese Prepared Food Technology Exchange Center" was grandly opened in Wuhan. More than 100 representatives from factories, large restaurant chain hotels, cold chain logistics centers, condiment research and development institutions, research institutes, Chinese masters and other parties in the food industry chain attended the event. The organizer of this event, Liang Zhi Long Cuisine Express, has been focusing on frozen catering ingredients, including the design, research and development and promotion of frozen catering ingredients, and it is the leading chain management organization in China's frozen and refrigerated food industry, with nearly 60 directly-managed stores nationwide, supplying ingredients to about 23,000 medium and high-end restaurants and hotels. "He judged that aquatic product prepared vegetables will become the backbone, this trend will also put forward higher requirements for the construction of aquatic products industry chain. He particularly emphasized that "the future bottleneck of aquatic product prefabricated vegetables must be technology, which comes from the higher requirements of safety, meat quality, taste, flavor and other aspects of raw materials of aquatic product prefabricated vegetables, so we must seek breakthroughs in the technical link. This is also the original intention of setting up the prefabricated vegetable technology exchange center this time."

He said that only through comprehensive schemes such as seed improvement, nutrition design, water quality control and processing adjustment, can we effectively improve and overcome the common problems of low meat yield, color change, color distortion, abnormal taste, peculiar smell of meat quality, soft shell of prawn, etc. With technical escort, the safety, nutrition and health of raw materials of prefabricated aquatic vegetables can be ensured, and the masses of aquatic products can be protected.

Since the outbreak of COVID-19, the traditional catering industry has been greatly impacted, and the prefabricated dishes featuring "ready-to-eat" "instant hot" "instant cooking" and "instant matching" just cater to the change of social life consumption mode. Driven by the ultimate pursuit of efficiency improvement by catering enterprises and the increasing double-layer demand of consumers for convenience, the prefabricated dish industry has risen rapidly. In 2021, the market scale of prefabricated dishes in China was RMB 345.9 billion. It is expected to exceed RMB 1 trillion by 2026.
